You’ll only need a few ingredients for this simple and nutritious morning-after meal: leftover cranberry sauce, equal parts oats and milk, nuts, seeds and some handy jars to put it all in.
Build the overnight oats before you go to bed, by layering a couple of tablespoons cranberry sauce, then add the oats and milk. Top it up with another tablespoon of sauce and sprinkle on a handful of almonds or pumpkin seeds. Sprinkle in a dash of cinnamon to the oats to boost the flavor, and if you need to pack in some protein, use dairy milk or pea protein milk for a plant-based alternative.
Buffalo Chicken Salad
This keto buffalo chicken salad is one of those insanely quick meals to put together if you still have leftover chicken on the table.
There’s no great science to this either. All you’ll need is your leftover cooked chicken; celery for the refreshing crunch and flavor; carrot if you looking to add another healthy veggie but not essential if you’d prefer to leave it out; green onions for that sharp bite; mayonnaise, dijon mustard and your favorite hot sauce.
